Awesome perfect spring time weather in the lower 70s, this Thursday it will hit 80s WOW! and it’s not even summer yet. Just beautiful weather today, a little breeze, not too bright, warm 70s, enjoying my ice scream for the first time since winter hahahah. You know ice scream has a lot of sugar, if you feel tire and boring and lost energy, just have ice scream, I prefer ice scream cone 🙂
Most Vietnam Vietnamese family always have meal with some kind of fish sauce, it’s similar to most American here with their salt and pepper or ketchup I guess, something to dip with to make food taste better or better easier to swallow. I personality don’t like the raw fish sauce, however if mixed with chili or better yet the so call sweet fish sauce (nuoc mam toi ot), that’s a good one to dip with anything, even eat it with white rice. Fish sauce does have salt and salty but it came from a fish, process of making fish sauce can be pretty nasty, but it’s believe me, if there’s any germs bacteria, it’s all dead :), nothing can survive in there, it’s like voka. The only thing about fish sauce is, it can be good, it can be bad, depend on the person’s taste, sometime expensive fish expensive fish taste better and have higher quality than cheap fish sauce either they use too much salt or bad fish to make the fish sauce. These are just my personal opinion, you can wiki search for fish sauce to get more information.
Last night, I went to sleep and didn’t know the refrigerator door was slightly open or not fully closed. This morning when I woke up, open the refrigerator and I can smell the warm food, I was warm because of the light bulb producing heat the whole night, and no match for the refrigerator cool cold air producing the whole night, although the weather was chilly. The milk seems to be still good, I might have to dump the soup. It’s one of those thing that will happen once in a while, and make me think of a way to prevent, I would like to see the next generation refrigerator with alarm or warning if left open or not fully close for more than certain time frame such as 5mins ….
Yes, while at walmart earlier today, I bought a big grilled chicken for $5, and the whole family of four filled 🙂 hahahah. It’s good but I don’t think we can do it everyday. Great meal with ginger ale or rice or other typical items readily available at home. However I noticed dipping with ketchup and A1 isn’t that good, try lime salt and pepper it taste a lot better and good for your stomach to digest due to the lime 🙂 yum! if you want, have a glass of wine or beer once a week is perfect although you can do daily one bottle of beer
My week end recipe. Cucumber fish sauce with fried fish. Easy meal, just fried the fish, slice the cucumber, add in fish sauce then eat with rice, and off course soup or ginger ale 🙂 yuumm! This reminds me of Vietnam my cousins and friends used to go catch fish around the creek river bank or small pond with their bare hand. The best one to fried are call “Ca Loc” especially the one from the rice field 🙂 catch it fresh fried it or grill it then peel off the skin, then dip it with good fish sauce and yum 🙂
How can I forget the place that I grow up. Well at least to 11 years old or older I think, then became a Vietnamese refugee like many others from Vietnam in Malaysia Paula BiDong Sungei Besi and the Phillipines Bataan I think, can’t remember the exact name. Where I used to live in Vietnam, a place call Cu Lao, Tan Thoi, it get flooded once in a while but it’s not real bad didn’t get into the house though. I used to go catch fish with my bare hand out on the creek “Rach” back of the house. There is a special tree call “Cay Ban” “Cây Bần”, it only grow where there are plenty of water and mud but the root is very strong to keep it from falling, specially it grow near the river bank. I use to harvest the root to create wine cap for my grandma, it’s great for fine cap, just dried it and turn it into wine cap. Be careful though, there’s a special bees that lives on this tree, we call it “ông bần” it was name after this tree. I got stunk a couple times before by these bees, and it hurt swalln for a good hours but it goes away, these bees are not posionous :). The tree has fruit call “Trái Bần” and can taste pretty bad if eat it raw, very bitter sometime and very sour 🙂 but awesome exotic fruit just to get you high hahahahah. The fruit is also good for cooking Vietnamese sour sour “Canh Chua”, I like to go pick it but not much eating it, we have to climb up the tree and get it, the fruit look for very nice, and the flower is beautiful. Especially when the flower start to fall off, it’s beautiful and can be pretty romantic for couple whom peddle their boat pass by it, various colors but mostly white. Vietnamese Mi Vit Tiem (Mi Vit Tiem) is one of my favorite, nothing like a morning bowl of this Five Spice Duck Soup. Preparation isn’t easy, basically you gotta cook the duck first and cook again with herbal, it look burned but it’s not, it’s just well done cook with herbal moist. The soup is tasty as well, very good, and then all the vegetables such as mush room, nuts, green onion and other onions, and off course steamed pak choy. Add noodle add the duck leg and and poor a little bit of the hot soup over, taste as good as Pho or even better, I believe the price is higher than a bowl of Pho due to longer preparation and you get the whole duck leg. Can you substitute with chicken leg? -Yes, but it won’t taste as good. One thin to keep in mind is when you cook the duck, ensure all the fat melted away, fat isn’t good and isn’t healthy either, cook it like Roasted Duck let all the fat dripped away.
