Most Vietnam Vietnamese family always have meal with some kind of fish sauce, it’s similar to most American here with their salt and pepper or ketchup I guess, something to dip with to make food taste better or better easier to swallow. I personality don’t like the raw fish sauce, however if mixed with chili or better yet the so call sweet fish sauce (nuoc mam toi ot), that’s a good one to dip with anything, even eat it with white rice. Fish sauce does have salt and salty but it came from a fish, process of making fish sauce can be pretty nasty, but it’s believe me, if there’s any germs bacteria, it’s all dead :), nothing can survive in there, it’s like voka. The only thing about fish sauce is, it can be good, it can be bad, depend on the person’s taste, sometime expensive fish expensive fish taste better and have higher quality than cheap fish sauce either they use too much salt or bad fish to make the fish sauce.
